How to Make Dutch Butter Cake

This recipe for traditional Dutch butter cake, or boterkoek, will give you the texture of a brownie and the flavor of rich sweet butter in an opulent dessert that’s sure to please every palate. Delicious on its own, this butter cake also shines when paired with fruit preserves, toasted almonds, lemon curd or crystallized ginger.

Instructions

Things You'll Need:

  • 3 small eggs
  • 3 sticks of butter (1½ cups)
  • 1½ cups sugar
  • 3 cups flour
  • Crystallized ginger or toasted almonds (optional)
  1. Step 1

    Heat oven to 325 degrees F. Allow butter to reach room temperature.

  2. Step 2

    Beat 2 of the eggs. Save the third egg for later.

  3. Step 3

    In a medium bowl, combine butter, sugar, flour and 2 beaten eggs. Put batter into an 8 1/2-inch round cake tin.

  4. Step 4

    Beat remaining egg and brush over top of cake. Drag a fork through egg to create designs.

  5. Step 5

    Bake cake for 1 hour or until golden brown.

Tips & Warnings
  • If adding crystallized ginger or toasted almonds, sprinkle over egg on top of cake and press in lightly. Fruit preserves or lemon curd can be used to top cake once cooled.
