Hungarian hot peppers add a flavorful heat that will warm you to the bones while the satisfying contrast of crunchy vegetables and seasoned meatballs will delight your palate. Instructions

Things You'll Need:

  • 1 lb. ground beef or turkey
  • 2 Hungarian peppers, seeded and halved
  • 3 carrots, sliced
  • 2 leeks, sliced
  • 3 celery stalks, sliced
  • 2 potatoes, diced
  • 1/4 cup parsley, chopped
  • 3 cubes beef bouillon
  • Nutmeg
  • Salt
  • Pepper
  1. Step 1

    Boil water. Fill large pot with water (about 6 to 8 cups). Add Hungarian peppers and bring to a boil.

  2. Step 2

    Make meatballs. In medium bowl, season ground meat with nutmeg, salt and pepper. Form tablespoons of meat mixture into balls and add to boiling water.

  3. Step 3

    Chop vegetables and parsley. While meatballs are cooking, chop carrots, leeks, celery, potatoes and parsley. Once meatballs are browned, add vegetables to soup.

  4. Step 4

    Season soup. Add 2 cubes of beef bouillon, salt and pepper to soup. Once bouillon has dissolved, taste soup, and add another cube if necessary.

  5. Step 5

    Finish soup. Check to make sure potatoes are cooked through but not overcooked. Remove Hungarian peppers and discard.
