Instructions
Things You'll Need:
- 2 cups zucchini (2 medium)
- 2 red or bell peppers
- 1 cup red onion
- 1 tablespoon olive oil
- 1 can of Pam® no-stick spray
- 1/3 cup basil, chopped
- 1 ½ tablespoon balsamic vinegar
- Pepper
- 2 tubes polenta, 12 slices each
- ½ cup (2 ounces) feta cheese

Step 1
Preheat oven to 475 degrees.

Step 2
Combine zucchini, red or bell peppers, red onion and olive oil in a large bowl. Arrange in a single layer on a jelly-roll pan coated with PamĀ®.

Step 3
Bake at 475 degrees for 25 minutes or until tender, stirring after 15 minutes. Stir in basil, vinegar and some pepper.

Step 4
Preheat broiler. Place polenta slices on baking sheet coated with PamĀ®.

Add salt and pepper.

Step 6
Broil 7 minutes on each side.

Spoon on the vegetables.

Sprinkle on cheese.
