How to Cook Polenta With Roasted Vegetables

This is a simple but filling dish.

Instructions

Things You'll Need:

  • 2 cups zucchini (2 medium)
  • 2 red or bell peppers
  • 1 cup red onion
  • 1 tablespoon olive oil
  • 1 can of Pam® no-stick spray
  • 1/3 cup basil, chopped
  • 1 ½ tablespoon balsamic vinegar
  • Pepper
  • 2 tubes polenta, 12 slices each
  • ½ cup (2 ounces) feta cheese
  1. Step 1

    Preheat oven to 475 degrees.

  2. Step 2

    Combine zucchini, red or bell peppers, red onion and olive oil in a large bowl. Arrange in a single layer on a jelly-roll pan coated with PamĀ®.

  3. Step 3

    Bake at 475 degrees for 25 minutes or until tender, stirring after 15 minutes. Stir in basil, vinegar and some pepper.

  4. Step 4

    Preheat broiler. Place polenta slices on baking sheet coated with PamĀ®.

  5. Step 5

    Add salt and pepper.

  6. Step 6

    Broil 7 minutes on each side.

  7. Step 7

    Spoon on the vegetables.

  8. Step 8

    Sprinkle on cheese.
