Many potsticker recipes use wonton wrappers. The perfect potsticker is not made from a wonton wrapper, but from fresh pasta you created from scratch. Potsticker pasta is easy to make and sure to please everyone with mouthwatering results.

Instructions

Things You'll Need:

  • Flour
  • 1 tsp. salt
  • 2 eggs
  • 1 cup ice water
  • Spray oil
  • Plastic wrap
  1. Step 1

    Beat 2 eggs together until they are frothy and light. These eggs should resemble a mustard color when they are ready.

  2. Step 2

    Add 1 teaspoon of salt to the eggs and mix again. Beat this mixture until the salt is incorporated.

  3. Step 3

    Add the ice water to the mixture and beat for the third time. Make sure to remove the ice before adding the water. Ice water is a key ingredient to great potsticker pasta.

  4. Step 4

    Add flour gradually and mix. Once the mixture pulls away from the side of the bowl, stop adding flour. Knead lightly for only 30 to 45 seconds. Potsticker pasta is delicate and should not be over-kneaded.

  5. Step 5

    Spray the pasta with oil and wrap in plastic wrap. Allow the fresh pasta to rest in the refrigerator for at least 1 hour before rolling out for potsticker assembly.

Tips & Warnings
  • Remove ice before adding water.
  • Do not use pasta for any recipe until allowing it to rest for at least 30 minutes.
