This recipe makes perfect traditional Greek Honey Biscuits, everytime.

Instructions

Things You'll Need:

  • FOR THE DOUGH
  • 1 cup olive oil
  • 1 cup sunflower oil
  • 1 KG all purpose flour
  • 1 cup fine semonlina
  • 1 cup sugar
  • 2 tsps baking powder
  • 1 tsp soda
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 cup water
  • 1/2 cup brandy
  • 1 cup freshly squeezed orange juice
  • FOR THE SYRUP
  • 2 cups water
  • 1 cup sugar
  • 1 cup honey
  • lemon rind
  • 1 tbls lemon juice
  • 3 tbls brandy
  • 6 cloves
  • 1 tsp ground cinnamon
  • FOR THE TOPPING
  • finely ground walnuts
  1. Step 1

    In a large bowl, mix all the liquid ingredients together. Add baking powder, soda, cinnamon and cloves. Mix well. Slowly hand mix the semolina and flour. The dough must be soft, but not sticky.

  2. Step 2

    Preheat oven to 180°

  3. Step 3

    Take pieces of the dough and make oblong shapes approximately 5cm in length and 3cm width.
    Place pieces, leaving about 2cm space between them, on well greased baking trays.

  4. Step 4

    Bake for approximately 15 mins. or until golden brown.
    Remove and allow to cool completely.

  5. Step 5

    Add all the ingredients for the syrup in a medium sized pot. Cook for about 10 mins. Remove the froth and lemon rind. Reduce heat.
    Slowly add the cooked, and cooled biscuits, simmer for about 3 mins. turning them so that the syrup can soak top and bottom of biscuit.
    Strain the biscuits and place them on a tray.

  6. Step 6

    Sprinkle with the walnuts.
