How to Make Roasted Red Pepper Hummus

Hummus is a wonderfully tasty and versatile food item. You can smear it on crackers with fresh chopped tomatoes, use it as a spread in sandwiches, or simply have it as a dip with fresh vegetables. This recipe is a nice twist on the traditional hummus, though, as it contains no nut products and is infused with the smoky flavor of roasted peppers. It’s quick, easy, and a wonderful spread to always have on hand.

Instructions

Things You'll Need:

  • Blender or food processor
  • 1 12 oz. can of chickpeas
  • 1 large clove of garlic, peeled
  • 2 to 3 slices of roasted red pepper from a jar, drained
  • 2 to 3 tbsp. olive oil
  • Salt and pepper to taste
  1. Step 1

    Drain the chickpea water from the can into the sink.

  2. Step 2

    Place the chickpeas, garlic, roasted red peppers, and a pinch of salt and pepper into a blender or food processor.

  3. Step 3

    Turn the machine on and blend the ingredients together.

  4. Step 4

    Slowly dribble in the olive oil until the mixture is smooth and creamy. The more oil you add, the less dense the hummus.

  5. Step 5

    Scoop the mixture into a serving bowl and enjoy.

Tips & Warnings
  • This recipe is fantastic if you or your guests have any nut allergies because it avoids using tahini and sesame oil which are traditionally used.
  • Always make sure you use your food processor or blender according to the instruction manual. Never place fingers or utensils near the cutting blades when the machine is plugged in.
