Things You'll Need:
- Small seedless watermelon
- 2 cloves of garlic
- Bunch of green onions
- Bunch of fresh cilantro
- Green bell pepper
- Small jar of jalapeño peppers
- Lime
- Sharp knife
- Cutting board
- Garlic press
- Bowl with a tight fitting lid
- Wooden spoon

Step 1
Start working at least two-and-a-half hours before you plan to serve the watermelon salsa.

Peel and chop the watermelon into ¼ inch cubes. If you did not buy a seedless watermelon, be sure to remove and discard all of the seeds.

Chop the green pepper so that the pieces are slightly smaller than the watermelon cubes. Slice the green onions. Finely chop the cilantro. If you want to make very hot watermelon salsa, chop several pieces of jalapeño as well. Combine all the fruit, vegetables and cilantro in a large bowl. Gently mix them with a large wooden spoon.

Press the garlic into the bowl over the mixed ingredients. Add 2 tbsp. of the liquid from the jalapeño pepper jar.

Roll the lime around to release its juices before cutting it open. Then cut it into quarters and squeeze the juice into the bowl over the mixed ingredients.

Stir the mixture gently before covering it tightly and placing it in the refrigerator. Let it chill at least two hours before serving.

Serve the watermelon salsa in a large bowl next to a bowl of lime flavored tortilla chips. Most people like to use the salsa as a dip.
