How to Make White Cheese Sauce

This sauce can be used for dips or for a dish with boiled potatoes or corn. It is based on white cheese and yellow hot peppers. It is different and elegant.

Instructions

Things You'll Need:

  • 4 hard yolks
  • 12 oz. white cheese
  • 1 cup milk
  • 1 lime juice
  • Extra virgin olive oil
  • 6 soda crackers
  • Yellow hot pepper
  1. Step 1

    Mix the yolk, cheese, milk, soda crackers, lime juice, and 1/3 cup of olive oil in the bBlender at high.

  2. Step 2

    Add olive oil as needed until it is a heavy cream.

  3. Step 3

    Add the yellow hot pepper slowly and taste it. Serve.

Tips & Warnings
  • You can make it spicier by adding more yellow hot pepper.
  • Eat boiled potatoes or corn with this sauce.
  • Remember not everybody likes it spicy.

on 1/11/2008 i don't make my cheese sauces this way. i make a sauce that's used in the restaurant business called a bechamel. if you look it up on foodnetwork.com you can get a recipe for it. when the sauce is hot u gradually add the types of cheese you want such as: parmesan, cheddar, any shredded cheese.
