How to Make Haitian Pumpkin Soup From Scratch

Pumpkin soup is a staple of Haitian cuisine and a typical meal on New Year’s Day. Follow these steps to make a delicious meal.

Things You'll Need:

  • A pumpkin (a medium sized-pumpkin will make soup for approximately 3 people)
  • ground meat or steak
  • green plantains, parsley
  • cabbage
  • salt
  • olive oil
  • hot pepper
  • green peppers
  • manioc
  • celery
  1. Step 1

    Boil the pumpkin. It is easier to cut the pumpkin into large pieces before peeling, then cut into thinner slices to boil. Boil until soft enough to crush with large spoon.

  2. Step 2

    Peel and cut into slices plantains and manioc. Boil.

  3. Step 3

    Cut cabbage, parley, celery into slices.

  4. Step 4

    If you are cooking ground meat, just season meat with salt, pepper; then cook on low fire with olive oil. If you are cooking steak then cut into small pieces and boil until cooked.

  5. Step 5

    Crush boiled pumpkin then add cooked meat, plantains, manioc parley, celery, spices into one pot. Add one cup of water for broth, 3 spoons of olive oil and salt to taste.

  6. Step 6

    Cover pot and let cook under medium heat for 15 minutes. Then, put the stove on low heat and let simmer to desired thickness of broth
