Like our younger siblings or goofy friends, meatloaf has become that dish we love to make fun of but couldn’t live without it. Here’s a twist on an old classic--an adaptable recipe that allows you to indulge in the comforting flavors of meatloaf without the guilt!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1 1/4 lb. ground turkey
  • 1 cup coarsely grated vegetable (such as carrot, zucchini, or squash)
  • 1 cup finely chopped onion
  • 1 clove garlic
  • 1/2 cup seasoned breadcrumbs
  • 1/4 cup chopped leafy herb (such as parsley, cilantro, basil, or tarragon)
  • 1 large egg
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/2 cup fruit spread (such as peach, seedless raspberry, or grape jelly)
  • 1/4 cup mustard (such as Dijon, stone-ground, or yellow)
  • Cooking spray

Step1
Prepare. Preheat oven to 350 degrees F. Spray cookie sheet lightly with cooking spray.
Step2
Sautee onion and garlic. Spray skillet with cooking spray and lightly sautee onion and garlic until translucent--about 3 minutes.
Step3
Combine ingredients. In a medium-sized bowl combine all ingredients except the fruit spread and mustard. Mix thoroughly with hands.
Step4
Make meatloaf. Place mixture on cookie sheet and form into the shape of a loaf with your hands (about 8 by 4 by 2 inches). Place in preheated oven and cook for about 45 minutes.
Step5
Prepare glaze. In a small bowl mix together mustard and fruit spread. Experiment with different combinations--the key here is to combine sweet with tart.
Step6
Glaze meatloaf. Remove meatloaf from oven after 45 minutes and spread glaze over the top. Return to oven for another 20 minutes.

Tips & Warnings

  • This meatloaf allows for so much variation you can mix and match until you find your favorite combinations. Or you can make it different every time!
  • Get creative! Add golden raisins to the meat mixture, sprinkle the glaze with rosemary, amp up the veggies in the meatloaf. It's hard to go wrong with this recipe!
