How to Make Creamy Bacon Chicken Bake

When you've had a busy day at work and are running carpools back and forth, you want to be able to feed your family a healthy meal using the ingredients you have right on hand. It's not always easy to come up with fresh, new dinner ideas that don't take a lot of time to prepare. If you're looking for a new chicken recipe, look no further Creamy Bacon Chicken Bake. It's an easy-to-make casserole that takes very little time to prepare. Read on to learn more.

Instructions

Things You’ll Need:

  • 4 skinless chicken breasts
  • 6 slices of bacon
  • can of cream of chicken soup
  • 1/2 cup dry bread crumbs
  • seasoning to taste
  • non-stick cooking spray
  • casserole dish
  • small bowl
  • frying pan
  • boiling pot

Step1
Preheat the oven to 400 degrees F.
Step2
Cut 4 skinless chicken breasts into halves. Fill a large boiling pot with water and place it on a high-heat burner, leaving it to boil.
Step3
Fry 6 slices of bacon in a frying pan while you are waiting for the water to boil. Make sure the bacon is fried until crispy, undercooked bacon will become soggy when the casserole is cooking in the oven.
Step4
Open a can of cream of chicken coup and pour it into a small bowl. Fill the soup can about halfway with water or measure out 1/2 cup of water. Combine the water with the soup and stir until it's creamy.
Step5
Blanch the chicken breasts in the boiling water. Blanching means that you will be cooking them most of the way in boiling water. It will keep the chick breasts moist and cook more quickly than in a frying pan or in the oven.
Step6
Leave the chicken breasts in the water for approximately 5 to 7 minutes or until there is very little pink left when you cut into the middle of one of the breasts.
Step7
Spray the bottom of a casserole dish with non-stick cooking spray and arrange the strained chicken breasts evenly in the dish.
Step8
Arrange the bacon slices on top of the chicken. Spread the soup mixture evenly across the top of the bacon-covered chicken, making sure to cover all of the chicken completely.
Step9
Season the meat with your favorite spices. Salt and pepper will add a little flavor, as will garlic powder and tarragon. Sprinkle 1/2 cup of dry breadcrumbs over the top of the casserole and bake, uncovered, for 40 minutes.

Tips & Warnings

  • Though any kind of breadcrumbs work well, those with Italian seasoning tend to add a little more kick to the Creamy Bacon Chicken Bake.
