For a new way of eating potatoes, try making Lemon Potato, a cold appetizer that will surprise everybody. Read on to learn how to make it.

Instructions

Things You'll Need:

  • 4 potatoes
  • 1 lime juice
  • 2 tbsp. extra virgin olive oil
  • salt, pepper and yellow hot pepper
  • 1 medium onion
  • 1 can chunk tuna
  • 1 tbsp. mayonnaise
  • 2 kalamata black olive
  • 1 hard boiled egg

    Two Portions

  1. Step 1

    Cook the potato with water, salt and pepper. When it is done, prepare it like you were going to make mash potatoes, take it out, peel it and smash it.

  2. Step 2

    Add the lime juice, olive oil, salt, pepper, yellow hot pepper. Then mix it with a fork and taste it. Set aside.

  3. Step 3

    Cut the onion in small pieces and wash it with water and salt. Do it twice.

  4. Step 4

    Add to the onions the tuna and the mayonnaise and mix it. Set aside.

  5. Step 5

    Divide the potato into 4 equal parts and make a layer with the potato and then add the tuna mix and cover with potato cream.

  6. Step 6

    Add a kalamata olive and 1/2 an egg on top to each portion. Put it in the fridge for 30 minutes or until it is cold.

Tips & Warnings
  • You can use plastic wrap paper so you can serve it later in a plate and make it look like a cake.
  • Because it has yellow hot peppers in the recipe it wont hurt you if you have arthritis.
  • Use an egg cutter to have it perfect.
  • Add the yellow hot peppers slowly and taste it.
  • These are large portions.
