Great on a hot day when you are looking for a light and healthy meal, this Salsa Chicken Taco Salad will hit the spot in both taste and sustenance. Here’s how to make it.

Things You'll Need:

  • 1 lb. chicken, cubed
  • 1 jar salsa (your preference)
  • 1 bag salad
  • 1 cup shredded cheese (a Taco cheese or similar works best)
  • 2 handfuls corn tortilla chips, crumbled
  1. Step 1

    Cut chicken into small cubes and cook in a shallow pan for 10 minutes (or until fully cooked and internal temperature reaches 165 degrees F).

  2. Step 2

    Drain any liquid from the pan and add salsa. Continue cooking for 3-5 minutes.

  3. Step 3

    Set chicken aside to cool for at least 30 minutes.

  4. Step 4

    In a large bowl, combine salad, cheese, and chicken, and crumbled tortilla chips. Toss well.

  5. Step 5

    Refrigerate for at least one hour before serving.
