Things You'll Need:
- 3 to 4 Garlic Cloves, chopped (fresh preferred)
- Half a medium onion, sliced
- Three tomatoes, sliced in wedges
- Spinach, broccoli or lentils
- Cumin spice
- Oregano
- Minced garlic, optional
- Cooked shrimp optional for variety
- two eggs, optional
- Olive oil
- Large pan
- Small pan

Step 1
Chop the garlic first. The reason for this is that recent research shows that to get the healthful benefits of garlic, you should chop it and let it sit for 15 minutes.

Chop your onions. No need to be fancy. Cut them up any way.

Pour enough olive oil into the pan so that it covers the bottom. You might have to swirl the pan to get the olive oil to spread.

Turn on medium heat and throw in the onions and the garlic. Add about a half teaspoon of cumin spice. It sounds exotic but you can get it anywhere for a buck fifty or so.

Add the oregano. This is key for taste.

Let that cook and slice your tomatoes.

In a side pan, cook your spinach, broccoli or lentils.

Throw the tomatoes in. Stir it all up.

Add your spinach, broccoli or lentils. Add about a handful of whichever you choose.

Heat that up. If you want to add eggs, crack them in the pan and mix it all up. You can also add shrimp here or neither.

Serve, eat and feel good.

on 1/22/2008 As much or as little as you want. I use about half a teaspoon because I love it. I use dried oregano -- a lot of that too. But fresh would be lovely!
