How to Make A Classic Hanukkah Dish: Latkes
Your mama is calling. The latkes are ready to come off the griddle. Oh wait, was that just your imagination dreaming up those crispy potatoe pancakes? It's time to quell your grumbling tummy, the traditional Hanukkah potato pancake aka 'latke' is as easy to make as it is to savor. Does this Spark an idea?
Things You'll Need
- 1 lb. of peeled, grated,russet potatoes
- 1 medium yellow onion, grated (peel first)
- 1 egg, lightly beaten
- 2 tbsp. flour
- 1 tsp. salt (ground sea salt is best)
- 1/8 tsp. pepper (fresh ground is best)
- 1 1/2 tbsp. oil

In a bowl, combine all ingredients, except oil.

In a nonstick skillet, heat 3/4 tablespoon oil, over medium-high heat.

Spoon 3 tbsp. of batter (1 per pancake) from the bowl and drop into the pan.

Flatten each pancake with a nonstick spatula. Cook pancake until golden brown by reducing heat to medium low and cooking 5 minutes to a side.

Remove pancake from pan when done and drain on a plate lined with paper towels.

Traditionally, latkes are served warm with sour cream or a chunky applesauce. A zesty tomato salsa or mango chutney would also be a great accompaniment.
