Simnel Cake is similar to a classic Christmas fruit cake, except it's covered with marzipan and served over Easter weekend in Britain. It's a rich cake made with dried fruit and spices and filled with almond paste. It can then be decorated with colored almond paste in a holiday theme. Here's what you need to make Simnel cake for your holiday celebration.

Instructions

Things You'll Need:

  • 1 1/4 cup fresh butter
  • 1 cup light brown sugar
  • 5 large eggs
  • 1 3/4 cups self-rising flour
  • 1 1/3 cups golden raisins
  • 1 cup dried currants
  • 1/4 candied mixed fruit
  • 2/3 cup candied cherries
  • 2 tbsp. lemon zest
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1/2 tsp. ground ginger
  • 1 pound marzipan (almond paste)
  • 2 tbsp. apricot jam
  • 1 8-inch springform pan
  • Wax paper
  1. Step 1

    Preheat the oven to 300 degrees F.

  2. Step 2

    Prepare the pan. Butter the baking pan and lightly flour the bottom and sides. Line the pan with one layer of greased wax paper.

  3. Step 3

    Prepare cake batter. Cream the butter and brown sugar on medium speed in a mixer until light and fluffy.

  4. Step 4

    Add two eggs and flour. Beat in the eggs one at a time, followed by the flour.

  5. Step 5

    Add fruit and spices. Stir in the golden raisins, currants, mixed fruit, cherries, lemon zest, and spices one at a time to combine thoroughly.

    Pour 1/2 the batter into the greased pan.

    Prepare layer of almond paste. Roll out one half of the almond paste, and form an 8-inch circle. Carefully set this on top of the cake batter.

    Pour remaining batter on top of almond paste.

    Bake for 1 hour uncovered, then cover with foil to bake for an additional hour and 40 minutes. Cake will be a dark brown color and very firm.

    Remove from oven and let cool in pan for 10-15 minutes. Transfer to wire rack to cool at least 2 hours.

    Turn the oven setting to broil.

    Prepare to cover the cake. Brush the top of the cake with warmed apricot jam.

    Roll out another 1/2 of almond paste, and cut into an 8 inch circle. Place on top of cake and secure firmly by pressing down lightly on the edges.

    Brush the almond paste with remaining beaten egg.

    Place cake under broiler for 8-10 minutes until a light golden brown in color.

    Let cool at least 20 minutes before serving.

    Cut into slices, serve and enjoy!

Tips & Warnings
  • Simnel Cake is often decorated with 11 pieces of marzipan balls to represent the 11 Apostles.
  • The cake must be completely cool before placing the second layer of marzipan on top.
