How to Make a Twice-Baked Sweet Potato

This side-dish will take the spotlight on any dinner plate. It is best served with ham steaks or a tangy chicken recipe, and fresh greens.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 4 sweet potatos or yams
  • 2 Tbsp butter
  • 1 tsp sugar
  • 1 tsp cinnamon
  • 2 Tbsp brown sugar
  • 2 Tbsp quick oats

Step1
Preheat the oven to 425.
Step2
There are two options here a) Bake the sweet potato for approximately an hour, until penetrable with a fork, or b) Stab the potato all around with a fork and microwave it for approximately 10 minutes. I prefer the latter. While the potato is cooking, melt your butter.
Step3
With a sharp knife, cut a football-shaped chunk out of the top of the potato. Throw away this bit if skin. Scoop out the sweet potato mush and put in a mixing bowl. Do not scoop out so much that the skin can't keep the potatoes shape.
Step4
Stir melted butter in with the sweet potato mush. Add cinnamon and sugar. It should be similar in consistancy to whipped potatoes now. Spoon this filling back into the potoatoes.
Step5
Mix equal parts of brown sugar and quick oats. Thickly sprinkle this topping over the potatoes.
Step6
Bake at 425 for 30 minutes or so.
