How to Make Caramel Cookie Bars

Caramel cookie bars have long been a bake-off classic at Southern potlucks and get-togethers. They're made with sugar and pecans and are a super-sweet treat that will quickly become your favorite. If you're looking for an easy treat at the last minute, here's what you need to make a batch of addictive caramel cookie bars.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1 stick fresh butter
  • 1 stick of margarine
  • 1 cup firmly packed light sugar
  • 1 cup chopped pecans
  • 1/2 cup butterscotch chips
  • 18 to 20 honey graham crackers
  • 1 15x10 jelly roll pan

Step1
Melt the butter and margarine. Melt the stick of butter and margarine together in a small saucepan or in the microwave. Set aside.
Step2
Prepare sugar mixture. Mix the pecans and sugar together in a medium saucepan, then add the melted butter mixture. Bring entire mixture to a boil for 3 to 4 minutes.
Step3
Thicken the butter mixture. Lower the heat of the sugar mixture, then stir in butterscotch chips. Stir constantly on low heat until mixture starts to thicken and butterscotch chips are completely melted.
Step4
Preheat oven to 350 degrees Fahrenheit.
Step5
Prepare the jelly roll pan. Line the jelly roll pan with a layer of Graham crackers.
Step6
Prepare to bake. Spread the caramel mixture evenly on top of the Graham cracker layer.
Step7
Bake for 10 to 14 minutes until set.
Step8
Cut into squares while still warm, and enjoy!

Tips & Warnings

  • Caramel cookie bars can be stored covered for at least a week.
  • Add dark chocolate chips or walnuts for variation.
