How to Make a Caramel Tart

  • Baked 8-inch pastry shell
  • 1 cup whole milk
  • 1 cup brown sugar
  • 1 tablespoon golden syrup
  • 1 tablespoon fresh butter
  • 2 large eggs
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon white sugar

      Prepare the eggs. Separate the eggs into two separate bowls, and set aside.

      Make the caramel mixture. Mix together the brown sugar, golden syrup, butter, egg yolks, flour, and vanilla extract in a medium saucepan and bring to a boil.

      Let mixture bubble for 1 to 2 minute, then lower heat to simmer. Brown sugar should be dissolved completely.

      Continue stirring caramel as it thickens, and lower heat to lowest setting for 1 to 2 minutes.

      Pour the caramel into pastry shell. Carefully pour the caramel filling into the pastry shell and set aside.

      Prepare meringue topping. Beat the egg whites and white sugar on medium speed until soft peaks form.

      Finish the tart. Spoon the meringue mixture onto the caramel until evenly spread over entire tart.

Tips & Warnings

  • You can find golden syrup at many British supermarkets and international food stores

  • Use 1 tablespoon of authentic treacle instead of golden syrup if you can find it

  • Don't confuse golden syrup for corn syrup; they're two very different ingredients!
