Homemade coffee cake is the perfect pair to your morning cup of joe. Rich and flavorful, this sweet treat can be made in just a few simple steps. While classic coffee cake is made with a basic buttermilk (or yogurt) cake and a cinnamon topping, coffee cake can also be made with fresh blueberries (or other fruit), lemon juice and zest for a citrusy treat, and can include streusel topping or glaze.   • 2 cups sifted flour

  • 1/2 teaspoon salt

  • 2 teaspoons ground cinnamon

  • 1 1/4 cup brown sugar

  • 2/3 cup sugar

  • 1/4 cup oil

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 egg, beaten

  • 1 cup buttermilk

  • Large mixing bowl

  • Electric mixer

  • 9-by-13 baking dish

  • Butter for greasing

  • Spatula

Step 1

Preheat the oven to 350 degrees F. Mix the flour, salt and cinnamon in a large mixing bowl.

Add the brown sugar, cane sugar and oil to the mix. Stir together to combine. Set aside 1 cup of this mix for the topping, and transfer the rest of it to an electric mixer.

Add the baking soda, baking powder, egg and buttermilk to the mixer and blend until smooth.

Step 4

Pour the cake batter into a buttered 9-by-13 baking dish. Smooth out the batter evenly using a spatula.

Step 5

Sprinkle the reserved topping evenly over the cake batter. Gently press the topping with a spatula or the back of a spoon. Bake for 30 to 35 minutes, or until the coffee cake tests clean when poked in the center.

Step 6

Allow coffee cake to cool for at least 20 minutes before cutting large slices and serving!

Tip

You can replace the buttermilk with whole milk plain yogurt or Greek yogurt. Add fresh berries or chopped nuts to the cake by folding about 1 cup into the cake batter once it's finished mixing.
