How to Preserve Food With Lemon Juice

Lemons may be one of the most versatile and useful foods on the planet. Everyone loves fresh lemonade on a hot day or a squeeze of lemon juice on fish or seafood. Aside from being a nutritious fruit, lemon is a disinfectant, anti-septic, astringent and even helps to preserve and revive foods. With a few tips, you can learn to extend the life of fresh fruits and vegetables with just a simple lemon. Read on to learn more.

Instructions
  1. Step 1

    Crisp dull droopy lettuce with a splash of lemon juice. Fill a bowl with cold water and the juice from one small fresh lemon. Soak the lettuce in the refrigerator for one hour before serving. Your lettuce will be fresh and crisp, and the slight lemony flavor will add the perfect touch to any salad.

  2. Step 2

    Keep a fruit salad from losing its fresh bright color by preserving it with a splash of lemon juice. Add a tablespoon or two to your fruit salad and stir well. The lemon juice will keep apples, bananas, peaches, pears and other fruits crisp and will stop them from turning brown.

  3. Step 3

    Use lemon to preserve avocado. Avocado is a popular fruit used in face masks, salsas and salads; however, in just a short time the beautiful green color turns black. Adding lemon juice to any recipe that includes avocados will keep them looking green and fresh.

  4. Step 4

    Preserve the color of peeled potatoes with a splash of lemon juice. If you want to peel potatoes earlier than you are going to cook them, but you don't want them to turn a purple starch color, you can soak them in lemon water or even rub the outside of them with a half a lemon to keep them white.

on 12/13/2008 Cut 1/3 to 1/2 of the avocado, peel it leaving most of the peel in tact. Leave Pit in when plausible. Place remainder peel over rest of avocado. Peel will work good even if it spits 2 or 3 times, just close the gaps best as you can. Put one paper towel in tupperware and put left over avocado on top of paper towel with remainder peel over the other 1/3 to 1/2 of the avocado. YOU MUST PUT AVOCADO IN FRIDGE OR THIS WON'T WORK. This will preserve the avocado texture, flavor and freshness with no lemon juice needed (which alters the flavor anyway). It may put a slight splinter brown lining on exposed part of avocado which can be thinly sliced off if desired. Preserving your avocados texture, flavor and freshness for about a month after ripening can be done by this method as well as when you cut a part of it. on 11/1/2008 You can also take the remainder PEEL (if it comes off in a good strip) of the Avocado and place it over the remainder of the other half (best to leave pit in when plausible). Best if you put in tupperware. Also, preserving your avocado's freshness for about a month after ripening can be done by putting them in sealed tupperware in the fridge.

on 10/9/2008 with the lemon juice for the apples, do you water it down or just straight lemon juice ? And does it leave a stronge lemon taste? I have a picky child that loves apples but wont eat then if they are brown, and does not like lemons at all!

Firstly, let us note by the spelling that she is American and therefore not be trusted. Secondly, it sounds to me as if the lemon bleaches the potato in question! Acidic.
