How to Make Greek Roasted Chicken and Potatoes

Greek roasted chicken and potatoes is an easy, satisfying dish that requires only a few ingredients. Add a salad and some fresh bread and you have a delicious, stress-free dinner for your whole family.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 2 1/2 lb to 3 lb chicken, cut into pieces (you can also use boneless, skinless chicken)
  • 4 to 5 medium potatoes, cut into 1 inch pieces
  • 1/4 cup olive oil
  • 1/4 cup butter, melted
  • 1 lemon, juiced
  • 2 Tbsp dried oregano

Step1
Wash chicken pieces and pat dry.
Step2
Place the chicken and potato pieces in a roasting pan.
Step3
Sprinkle the chicken and potatoes with salt and pepper.
Step4
Blend together the oil and butter. Add lemon juice.
Step5
Baste the chicken and potatoes with the oil and butter mixture. Sprinkle with oregano.
Step6
Pour any remaining oil and butter in the pan. Cover the top of the pan with aluminum foil. Bake at 350 degrees for 1 1/2 hours.
Step7
Increase oven temperature to 400 degrees. Remove the foil and bake another 15 minutes until the chicken and potatoes are golden brown.
Step8
Remove from the oven and serve hot.
