How to Make Souvlakia

Souvlakia is a lamb or pork shish kebab seasoned with traditional Greek spices--oregano, garlic, and olive oil.

Instructions

Things You'll Need:

  • For the Marinade, 1/3 cup lemon juice
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp oregano
  • 2 cloves garlic
  • For the kebabs, 3 lb boneless leg of lamb or pork tenderloin, cut in 1-1/2 inch cubes
  • 2 green bell peppers, cut into chunks
  • 1 large onion, cut into wedges
  • skewers for the kebabs
  1. Step 1

    Prepare the marinade. Whisk together the lemon juice, oil, salt, oregano, and garlic. Marinate the lamb or pork in a sealed container over night. Turn the meat occasionally throughout the marinading process.

  2. Step 2

    Open the container and remove one piece of meat. Skewer the meat, then the pepper, then the onion. Continue alternating pieces until the skewer is full.

  3. Step 3

    Place kebabs on a grill heated to medium temperature. Cook the kebabs for six minutes on each side, turning the skewers once.

  4. Step 4

    Baste the kebabs with the marinade during the cooking process.

  5. Step 5

    Remove cooked kebabs from the grill. Serve while hot.
