How to Bake Easter Bunny Cookies

Baking cookies is one special way to celebrate the Easter holiday and the arrival of spring. Follow these steps to bake and decorate quick and easy Easter bunny cookies that will delight the taste buds of every member of the family.

Things You'll Need:

  • 1 tube of pre-made sugar cookie dough
  • 3/4 cup flour
  • 2 tablespoons powdered egg white
  • 6 tablespoons lukewarm water
  • 3 cups confectionery sugar
  • 1/2 teaspoon fresh-squeezed lemon juice
  • Pastel-colored food coloring (pale yellow, light pink, sky blue and mint green)
  • Large bunny cookie cutter
  • 5 sturdy plastic bags
  1. Step 1

    Take the cookie dough out of the refrigerator 1 to 2 hours before baking the Easter cookies to allow it to soften.

  2. Step 2

    Turn on the oven and preheat it to 350 degrees Fahrenheit. Mix together the cookie dough and flour in a large bowl.

  3. Step 3

    Spread a small handful of flour on a table or countertop, and smooth some flour over a rolling pin. Then, roll out the dough until it is 1/8-inch thick. Press the Easter bunny cookie cutter into the dough to make the cookies. Roll out the scraps, and make more cookies.

  4. Step 4

    Lay the bunny cookies on top of ungreased cookie sheets. Slide the sheets into the oven, and bake for about 8 minutes until they are light brown in color. Move the bunny cookies to a rack and allow them to cool.

  5. Step 5

    Beat the powdered egg white and water together on low speed in a stand mixer until the mixture is smooth. Pour the confectionery sugar and lemon juice into the bowl, and turn the speed to high. Beat the mixture for 5 minutes, or until all ingredients are combined.

  6. Step 6

    Set out 5 small bowls or containers, and pour equal amounts of icing into each. Put one of the bowls aside. This one contains icing that will remain white.

  7. Step 7

    Place a few drops of the pink food coloring into one bowl, a few drops of the blue into another, a few drops of the green into the third bowl and a few drops of the yellow into the last bowl. Stir each to combine.

  8. Step 8

    Pour the contents of each bowl into its own sturdy plastic bag. Cut off one corner of each of the 5 bags. Hold the bag containing the white icing upright, and outline each Easter bunny cookie. Fill the inside of each bunny with another color. Allow the cookies to dry before eating.

Tips & Warnings
  • To prevent the Easter bunny cookie cutter from sticking to the dough, place it sharp-side-down in flour before using it to cut the dough.
