How to Make Chicken Casserole

This is a delicious, easy-to-make chicken casserole. It's a great, quick, versatile, one dish meal to take to a covered dinner or drop off with a sick friend. It makes a wonderful dinner at home as well. Try making a couple of extras and putting them in the freezer. On busy days, you can pull one out and put it in the oven for a complete, no-fuss meal.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 2 cups of cooked white rice
  • 1 can of cream of chicken soup
  • 1 cup of chicken broth
  • 1/3 cup of mayonnaise
  • 1 small jar of pimentos, drained
  • 1 cup of cooked white chicken meat
  • 2 boiled eggs, peeled and chopped
  • 2 cups of sharp cheddar cheese, shredded
  • 2 cups of cubed bread
  • 4 Tbsp. melted butter

How to Make Chicken Casserole

Step1
In a large bowl mix the rice, chicken, cream of chicken soup, chicken broth, mayonnaise, and pimentos together.
Step2
Carefully stir the boiled eggs into the mixture. Spread the mixture into a lightly greased casserole dish.
Step3
Top the casserole with the shredded cheese and and then the bread cubes. Drizzle the bread cubes with melted butter.
Step4
Wrap the casserole and freeze it at this point if desired, or immediately bake it in a 350 degree oven for 40 minutes.
