If you love grits, try making a grits casserole. This cheesy casserole is easy to make and is a wonderful dish to take to a brunch. It can even be used as a side dish for a dinner instead of potatoes. Serve it as an ultimate comfort food.

Instructions

Difficulty: Easy

Things You’ll Need:

  • cooked grits (see eHow article "How to Cook Creamy Grits")
  • 12 oz. of shredded sharp cheddar cheese
  • 2 eggs
  • 5 slices of crisply cooked bacon, crumbled
  • 1/4 cup of half and half cream
  • 1 tsp. salt
  • 1/2 tsp. pepper

How to Make Grits Casserole

Step1
In a large bowl, mix the cooked grits and shredded cheese together. If the grits are still hot from cooking, give them a little time to cool slightly.
Step2
In a smaller bowl, mix the eggs, salt, pepper, and cream until blended. Stir the mixture into the cooled cheese and grits mixture. Stir in the crumbled bacon.
Step3
Pour the grits mixture into a large lightly greased casserole dish and bake in a 375 degree oven for 1 hour and 15 minutes. The casserole should be bubbly and browned on top.
Step4
Cool the casserole for at least 15 minutes before serving. If served right out of the oven, it will be slightly runny.
