How to Make Tomato Stew

This is a very good recipe for a hearty tomato based stew with beef and potatoes. It is quick and easy to make and almost all the ingredients come from cans. Enjoy this warm, comforting dish with your family on a cold day.

Instructions

Things You'll Need:

  • 1 family-sized can of tomato soup
  • 1 can of petite diced tomatoes
  • 1 can creamed corn
  • 1 can of corned beef
  • 1 medium onion, chopped
  • 5 potatoes, peeled and cubed
  • 1 family sized can of beef broth
  • 1 cube of beef bullion
  • water
  • salt and pepper

    How to Make Tomato Stew

  1. Step 1

    Place the cubed potatoes and chopped onion in a medium soup pot and add the bullion cube and enough water to cover them by about 1 inch. Bring the potatoes mixture to a boil and cook over medium heat until they are just fork tender.

  2. Step 2

    Add the cans of tomato soup, creamed corn, diced tomatoes and beef broth to the potato mixture. Add salt and pepper to taste. Stir and bring back to a boil. Cover and simmer on low for 30 minutes.

  3. Step 3

    Open the corned beef and chop into coarse cubes. Add the beef to the tomato stew and simmer covered on low for another 20 minutes.

Tips & Warnings
  • This stew is wonderful served with hot cornbread slices.
