Falafel is a healthy, vegetarian-friendly meal from the Middle East and Mediterranean. It can be enjoyed alone with a dipping sauce or as a filling for a sandwich or wrap. Falafel is made with chickpeas and spices and can be made ahead of time for easy preparation. If you're looking for a meat-free lunch or snack, here's how to make a tasty falafel sandwich.

Instructions

Things You'll Need:

  • 1 pita bread round
  • 1 medium tomato
  • 1/2 yellow onion
  • 1 teaspoon fresh parsley
  • 1 teaspoon sandwich pickle
  • 2 tablespoons tahini
  • 6 small falafel balls
  • 2 tablespoons olive oil
  1. Step 1

    Prepare the pita bread. Heat the oil in a small frying pan and heat the pita bread until lightly brown. Set on paper towel and cut in half.

  2. Step 2

    Stuff the pita pockets with vegetables. Stuff each pita pocket with chopped onions, tomato and parsley.

  3. Step 3

    Add the falafel. Place three falafel balls inside each pita pocket.

  4. Step 4

    Top with pickle. Add a spoonful of pickle on top of falafel.

  5. Step 5

    Drizzle with tahini. Drizzle the falafel balls with one tablespoon of tahini.

Tips & Warnings
  • Wrap up the sandwiches in foil immediately after filling to preserve the heat.
