Chicken rotini pasta is a crowd-pleaser at any dinner table or family gathering. The dish makes use of the corkscrew-shaped rotini noodles, which are generally made of wheat flour. It is typically made with chicken, tomato sauce and various spices, but can also include cream of chicken soup and even cooked vegetables.   • 12 oz rotini pasta
  • 1 chicken breast
  • Vegetable or olive oil

      Boil water to prepare 12 ounces of rotini pasta. Add the pasta to the boiling water and cook for 6 to 9 minutes, or until noodles are al dente. Strain the noodles and transfer them to a large ceramic bowl or baking dish. Cover to keep warm.

      Cut one medium-sized chicken breast into small squares, removing excess fat. In a saucepan at medium heat, cook the pieces of chicken in vegetable or olive oil. Add spices to taste as desired, such as pepper, garlic, chopped onion and parsley add extra flavor to the meat. Cook the chicken thoroughly, making sure no pink color remains in the centers of the pieces.

      Add one can of tomato sauce to the cooked chicken. For a creamier taste, substitute the tomato sauce with a can of cream of chicken soup or chicken broth. Add any other desired flavorings at this stage, including oregano or spinach leaves. Heat the sauce and meat until warm.
