How to Make Tantalizing Orange-Glazed Cornish Hens

I know I'm not the only one out here who loves chicken. The challenge is trying to find new ways to cook this fantastic fowl. After all, there's only so much fried, barbecued, baked, broiled or steamed chicken one can take. Here's a simple recipe my family loves. It can actually be a nice twist to a typical holiday meal. Try it!

Instructions

Things You'll Need:

  • 6 Cornish hens, split
  • 1/4 cup of salad oil
  • 1 cup of orange marmalade
  • 1/4 cup of light brown sugar
  • 3 tbs. of wine vinegar
  • 2 tsps. of Worcestershire sauce
  • 1/2 tsp. of curry powder
  • 1/2 tsp. of ground ginger
  • Dash of cayenne pepper
  • Salt and pepper to taste

    How to Make Tantalizing Orange-Glazed Cornish Hens

  1. Step 1

    Wash and dry hens. Brush with oil and place in shallow baking dish. Bake at 350 degrees F for 30 minutes.

  2. Step 2

    While baking, prepare a sauce from remaining ingredients and simmer for 5 minutes over medium heat.

  3. Step 3

    After 30 minutes, pour sauce over hens (on all sides) and continue cooking for another 30 minutes or until done.

  4. Step 4

    This meal may also be cooked on a grill by either starting in the oven for 30 minutes and moving the hens to the grill or by completely cooking on the grill.

  5. Step 5

    If preparing the hens on the grill, do not baste with sauce until the last few minutes, or the sugar will stick and burn.

Tips & Warnings
  • Excellent side dishes can be broccoli and cheese casserole, fruit salad and bread sticks; or homemade macaroni and cheese, string beans with smoked sausage and potatoes and rolls.
  • Normally, there aren't many leftovers after this rib-sticking feast, but if you do have some on reserve, don't keep it in the fridge past 2 days. Freeze it or eat it. You don't want to get sick from leaving poultry around for too long.
