This delicious dressing is low in oil and fantastic on fresh spinach salad and mesclun. It is fairly thin; right before serving, pour over greens in bowl, toss well and serve immediately.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 cup orange juice
  • 2 tsps. honey
  • 1 tbs. sesame oil
  • 1 tbs. soy sauce
  • 1 tbs. rice wine vinegar
  • 1 tbs. water
  • 3 tbs. olive or salad oil
  • 1/4 teaspoon crushed red pepper flakes
  • 1 clove garlic, chopped
  • 2 tsps. grated fresh ginger
  1. Step 1

Reduce orange juice by cooking over medium heat in a small saucepan until only half remains. Let cool.

  2. Step 2

Pour cooled, reduced orange juice into blender. Add honey, sesame oil, soy sauce, vinegar, water, oil, pepper flakes, garlic and ginger. Process until emulsified.

  3. Step 3

Toss with salad immediately or store in refrigerator.

Tips & Warnings
  • This makes an excellent simple salad poured over baby spinach, sliced red onion and mandarin orange segments. Garnish with toasted sliced almonds.
