Nothing is better than pasta with shrimp, tomatoes and broccoli sauteed in extra virgin olive oil. This recipe is simple, filling and tasty for everyone. Serves 4 people.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 box of pasta
  • 1 head of broccoli
  • 1 large tomato or 2 small ones
  • Approximately 6 tbsps. of extra virgin olive oil
  • Minced garlic to taste
  • 1 lb. of cooked shrimp
  • A pot
  • A saute pan/lid

Step1
Bring a pot of water to a boil. Add uncooked pasta and lower heat. Cook pasta until done, or 8 to 10 minutes.
Step2
While heating water, also heat up a saute pan on medium. Add olive oil and garlic and slowly stir. If garlic spatters, cover saute pan with lid.
Step3
Add cooked shrimp to oil once it is well-heated. Cut up broccoli and tomato into bites and add to oil.
Step4
Saute broccoli, tomatoes and oil on medium heat until vegetables are tender but not soggy.
Step5
Drain pasta, serve onto plates, and top with broccoli, tomato and oil mixture. This dish also tastes great with parmesan cheese and Italian bread.

Tips & Warnings

  • This dish works best with spaghetti or penne pasta and the new whole wheat varieties also work well.
