How to make chicken cheesy potatoes casserole

This easy and simple recipe is a cross between augratin potatoes and baked chicken. 15 minutes prep time and 1 hour bake time. Yields 12 servings.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 lb cubed cooked chicken
  • 2 lbs or 1 package shredded hashbrowns (thawed if using frozen)
  • 1 16 oz carton of sour cream
  • 1 10 oz can cream of mushroom soup
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup melted butter
  • Salt and Pepper to taste
  • 1/2 cup crumbled butter crackers(Ritz)

Step1
Preheat oven 350. While oven is pre heating sauté chicken pieces if not already done. I have even used chicken nuggets that I microwave for the chicken pieces.
Step2
Spray large baking dish with cooking spray.
Step3
Combine all ingredients in baking dish.
Step4
Sprinkle cracker crumbles over mixer.
Step5
Bake for 55 minutes or until top bubbles.

Tips & Warnings

  • Add Veggie or instead of chicken. This casserole can be made with so many ingredients that the recipe can be different each time. Make it your very own with a twist here and there.
  • This recipe can be made organically and vegan with just a twist here and there. Tofu is a great ingredient for this recipe.
  • This dish is very hot when removed from the oven. Caution when serving children until dish is cooled.
