How to Make a Low Fat Breakfast Burrito

Breakfast has long been touted as the most important meal of the day. While the body does need energy to begin its day, it is also important not to weigh yourself down with unhealthy and fatty foods early in the morning. This breakfast burrito provides all of the nutrition you will need until lunch and none of the usual high calorie, high fat ingredients of regular breakfast fare.

Things You'll Need:

  • Large flour tortillas
  • Egg whites
  • Pre-cooked potatoes
  • A jalapeno pepper
  • Cilantro
  • Salsa
  • Onion
  • Green pepper
  • Frying pan
  • Stove
  • Microwave
  • Non-fat cooking spray
  1. Step 1

    Coat the entire bottom of your pan with cooking spray. Turn on medium to high heat.

  2. Step 2

    When oil is hot, add 1/2 cup thawed pre-cooked potatoes, 1/4 cup of chopped onion, 1/4 cup of chopped green pepper and 1/2 teaspoon of chopped jalapeno.

  3. Step 3

    Continue cooking over medium to high heat until potatoes and onions begin to brown. Add 1/2 cup egg whites to pan and stir constantly until eggs are no longer liquid. Reduce heat to low.

  4. Step 4

    Slightly dampen tortilla on both sides with tap water and place on microwavable plate. Place in microwave and heat for 30 seconds on high. Tortilla should be soft and steamed.

  5. Step 5

    Stir contents (filling) of frying pan again and spoon onto lower quarter of tortilla in a thin line. Drip salsa onto filling. Sprinkle 1 tablespoon of cilantro over salsa and filling.

  6. Step 6

    With the filling closest to you, fold sides of tortilla to cover both ends of the filling. Hold these sides down and roll tortilla forward until it is sealed.

Tips & Warnings
  • Experiment with different ingredients for filling.
  • Adding low fat sour cream along with the salsa is delicious.
  • Don't worry about your rolling technique. Tortillas are inexpensive and the filling can easily be transferred to a new one.
