This is an easy recipe for chicken fried steak with a wonderful, crunchy crust. Use pre-purchased cube steak for the recipe, or make your own cube steak by using a meat mallet to tenderize round steaks. This is wonderful served with rice or mashed potatoes and a vegetable.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 4 cube steaks
  • 2 cups of flour
  • 2 sleeves of saltine crackers, crushed into crumbs
  • Salt and pepper
  • 2 cups of milk
  • 1 egg
  • Vegetable oil for frying
  • Frying pan
  1. Step 1

In a medium bowl, whisk the milk and egg together. Put the crushed crackers in another bowl, and the flour in another.

  2. Step 2

Start pre-heating about 1 inch of vegetable oil in the frying pan over medium-high heat.

  3. Step 3

Salt and pepper the steaks on both sides. Dip each steak first in the flour, then in the milk mixture, and then in the crackers.

  4. Step 4

Carefully place the steaks in the pre-heated oil and fry on both sides until golden brown in color.

  5. Step 5

Sit the steaks on paper towels to drain excess oil and serve hot.

Tips & Warnings
  • Make sure your oil is hot enough before adding the steaks. If it is too cool, the breading will absorb too much oil.
  • If you cannot find cube steak, you can make your own by buying round steak. Beat the round steak with the flat side of a meat mallet until 1/4 inch or less thin. Then use the waffled side of the mallet to break up the meat and tenderize it even more.
