How to Cook Creamy Grits

Grits are a Southern tradition which are not just found on the breakfast table anymore. They are actually coarsely ground hominy or corn--sometimes yellow, but usually white--cooked to creamy perfection and served with butter, salt and sometimes cheese. Here is a basic recipe for cooking this wonderful dish.

Instructions

Things You'll Need:

  • 3/4 cup of regular white grits
  • 4 cups of water
  • 1 cup of whole milk
  • 1 tsp. salt
  • Sharp cheese
  • Butter
  • Crisply cooked crumbled bacon (optional)
  • Covered medium cooking pot
  1. Step 1

    Bring water, milk and salt to a boil in pot over medium-high heat.

  2. Step 2

    Slowly pour grits into the boiling pot, stirring constantly while pouring. Continue to stir and cook for 2 to 3 minutes.

  3. Step 3

    Turn the heat down to low and cover the pot.

  4. Step 4

    Simmer the grits for 30 to 45 minutes, stirring grits every 5 to 10 minutes.

  5. Step 5

    Turn off the heat and allow grits to sit for 15 minutes. Serve with butter, additional salt if needed, grated sharp cheese and crumbled bacon.

Tips & Warnings
  • It is important to stir the grits frequently to keep them from getting lumpy. Be very diligent about stirring, especially in the first 10 minutes of cooking.
  • Your finished grits should be tender, thick and creamy.
  • You can always add more liquid and increase cooking time if the grits are not tender enough.
