How to Cook Green Beans Southern Style

You haven't had green beans until you've had them seasoned Southern-style. Green beans are a popular vegetable in the South and they are most commonly served slow-seasoned with pork and onion. Cook them this way, and everyone will be coming back for more.

Instructions

Things You'll Need:

  • 1 lb. bag of frozen cut green beans with ends trimmed
  • 4 tbs. of butter
  • 1 medium onion, chopped
  • 3 medium potatoes, peeled and cubed
  • 4 slices of bacon
  • 1 tablespoon or 1 cube of ham bullion
  • Salt and pepper to taste
  • Water
  • Large cook pot with lid
  1. Step 1

    Put 3 cups of water, bacon, bullion, salt, pepper and onion in the pot and bring it to a boil over medium-high heat. Boil for about five minutes.

  2. Step 2

    Stir the green beans into the mixture and bring the green beans back to a boil. Cover the pot, turn the heat down to low and simmer, stirring occasionally, for 1 hour and 30 minutes. If the water begins to evaporate, add a little bit more.

  3. Step 3

    Add the butter, cubed potatoes and more salt and pepper to the pot. Cover, and continue to simmer on low for another hour, stirring occasionally. Serve with a slotted spoon.

Tips & Warnings
  • Remember to stir the green bean occasionally to prevent scorching.
  • The green beans should always have a little liquid in them. Not enough liquid to cover them, but just enough for them to cook in without burning. Add more water if the level gets too low.
