How to Make Quick and Easy Chocolate Peppermint Cookies

Making Christmas cookies is something that can tend to get lost in all the holiday rush--sure, the cookies look pretty and taste great, but most of them just take so long to cook! Well, this recipe is almost as easy as just using those slice-and-bake ones with the preprinted Santa face, and it tastes a whole lot better. In fact, it's somewhat like a Christmas version of the Girl Scout favorite, Thin Mints.

Instructions

Things You'll Need:

  • 1 sleeve (36) Ritz-type crackers
  • 1 8 oz. box semisweet baking chocolate
  • 1/4 tsp. peppermint oil
  • 1 6" candy cane or a small handful of hard peppermint candies
  • Hammer, rolling pin, or other heavy object
  • Small bowl
  • Microwaveable bowl or double boiler
  • Knife
  • Baking sheets
  • Waxed paper
  1. Step 1

    Crush the candy cane or the peppermint candies with a hammer, rolling pin, or other heavy object. Leave the candy in its wrapper while you crush it, then slip the crushed candy out of the wrapper into a small bowl. Set aside for later use.

  2. Step 2

    Melt the chocolate in a microwave or a small saucepan over a double boiler. When the chocolate has melted, stir in the peppermint oil and mix well.

  3. Step 3

    Dip the crackers into the melted chocolate, making sure they are entirely coated. Scrape the excess chocolate off with a knife.

  4. Step 4

    Lay the cookies on baking sheets that you have covered with waxed paper. Sprinkle each cookie with crushed peppermint before the chocolate sets, then let the cookies set in the refrigerator for at least 1/2 hour before serving.

Tips & Warnings
  • You may omit the peppermint oil and peppermint candies and spread the crackers with peanut butter before dipping them in the melted chocolate in order to make mock Tagalongs.
  • These cookies freeze very well.
