Things You'll Need:
- 1 sleeve (36) Ritz-type crackers
- 1 8 oz. box semisweet baking chocolate
- 1/4 tsp. peppermint oil
- 1 6" candy cane or a small handful of hard peppermint candies
- Hammer, rolling pin, or other heavy object
- Small bowl
- Microwaveable bowl or double boiler
- Knife
- Baking sheets
- Waxed paper

Step 1
Crush the candy cane or the peppermint candies with a hammer, rolling pin, or other heavy object. Leave the candy in its wrapper while you crush it, then slip the crushed candy out of the wrapper into a small bowl. Set aside for later use.

Step 2
Melt the chocolate in a microwave or a small saucepan over a double boiler. When the chocolate has melted, stir in the peppermint oil and mix well.

Step 3
Dip the crackers into the melted chocolate, making sure they are entirely coated. Scrape the excess chocolate off with a knife.

Step 4
Lay the cookies on baking sheets that you have covered with waxed paper. Sprinkle each cookie with crushed peppermint before the chocolate sets, then let the cookies set in the refrigerator for at least 1/2 hour before serving.
