How to Make Banana Cake

This is a very fail proof recipe my mum made for me often when I was a kid. Enjoy!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 100g self raising flour
  • 1/2 teaspoon bicarbonate soda
  • a pinch of salt
  • 50g butter (at room temperature)
  • 50g sugar
  • 1 egg
  • 1 banana (large- overripte, not raw is best)
  • 25ml milk - depending on the size of the banana

Step1
You will need a 1lb loaf tin.
Stir self raising flour, bicarbonate soda and salt together.
Step2
Beat egg and mash the banana
Step3
Place butter and sugar in a mixing bowl and mix until light and creamy.
Step4
Add beaten egg gradually mixing well with a beater then add in mashed banana.
Step5
Fold in sieved vlour and add enough milk to give the right consistancy. (Should be slowly coming off the spoon.
Step6
Pour mixture into botton lined and grased tin and bake in oven. 350F for 30-35 minutes.

Tips & Warnings

  • For a bit of texture, I suggest adding chopped walnuts or pecans into your mixture before putting it into the loaf tin.
  • chopped dark chocolate is great too especially if you melt the pieces and swirl the mixture in the loaf tin- you'll get this beautiful marbled effect.
  • Always check the temperature in the oven and on your loaf (you don't want your lovely work ending up spoiled!)
