How to Make Cake Batter Cookies
Many people encounter little success when baking homemade cookies. You can still bake homemade cookies by taking a shortcut. Simply use cake mix in your cookie recipes. The cake mix provides an easy way around sifting your flour, salt and baking soda together and hoping the cookies rise properly. Things You'll Need
- 1 box cake mix any flavor
- 2 eggs
- 1/2 cup oil
- Measuring cup
- Spatula
- Tablespoon
- Hand mixer
- Bread dough beaters
- Medium size mixing bowl
- Baking sheet
- Wax paper

Preheat the oven to 350 F. Attach bread dough beaters to your hand mixer. Ready your prep station with the ingredients. Set out the cake mix of your choice, the oil and eggs. Lay out your measuring cup, spatula, tablespoon and mixer. Use a medium size bowl to mix all of the ingredients.

Add nuts to your cake batter. Prepare your baking sheet while the oven is heating. Use either a nonstick baking sheet or line it with wax paper. Another option is to oil the cookie sheet lightly. Dust all-purpose flour onto the pan and shake off the excess, in much the same way that you prepare a cake pan. Set it aside while you prepare the cake batter cookies.

Combine the cake mix, oil and eggs. Mix on medium speed for two minutes. Scrape the sides with the spatula while mixing in order to get an even consistency in the cookie batter.

Scoop small portions of the cookie dough with the tablespoon. Drop the spoonfuls onto the baking sheet, spacing the dollops of dough two inches apart. Place the cookie sheet one level above the middle rack in the oven. Placing it on the higher rack in the oven prevents the bottoms of the cookies from becoming too dark or even burnt.

Bake for 10 to 12 minutes or until golden brown. If you are still unsure if the cookies are done, take one cookie from the oven with a spatula. Break it apart and taste.

Remove the cookie sheet and allow the cookies to cool on the sheet itself for one minute. After one minute, move the cookies to a wire rack to finish cooling. Replace the wax paper before dropping your next batch of cookies onto the baking sheet.

Tips & Warnings
Change the flavor of your cake batter cookies easily. Add half a cup of one of the following: chocolate chips, peanut butter or the chopped nuts of your choice.
Another option is to use different flavors of cake mix. Chocolate and vanilla varieties are popular, but you can also make Christmas cookies from spice and carrot cake mix. Use red velvet cake mix and frost the cookies for another holiday cookie treat.
