What's so special about spaghetti, you might ask. I prefer mine with a variety of meat, vegies and plenty of cheese. Everyone has a favorite recipe for cooking just about everything, so here's my personal twist on a culinary classic.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 lb. of spaghetti or angel hair pasta
  • 1/2 lb. each of pork sausage, ground beef and ground sweet Italian sausage
  • Olive oil
  • 1 cup of diced onion
  • Diced green or yellow bell peppers
  • Boiling water
  • 25.6 ounce jar of spaghetti sauce
  • 10 ounce can of Rotel tomatoes and green chilies or 14.5 ounce can of diced tomatoes
  • 1/2 cup of red wine or chicken broth
  • Salt
  • Black pepper
  • Melted cheese
  • Garlic bread or hot buttered rolls
  • Garden salad
  • Colander
  • Kitchen tongs
  1. Step 1

Fill a large pot with cold water and add a pinch or two of salt. Bring to a boil.

  2. Step 2

Pour a little olive oil into another large pot or deep skillet. Add your meats, onion and bell peppers. Cook over medium heat until meat and vegies are done.

  3. Step 3

Add the pasta to the boiling water. Pour about a teaspoon of olive oil into the pot and stir the noodles to prevent sticking. Add another pinch of salt.

  4. Step 4

Add spaghetti sauce, red wine (or chicken broth) and tomatoes to the cooked meat and bell peppers mixture. Check the consistency and add more liquid as needed. Cook over low heat to avoid boiling over. Let this mixture cook slowly until the tomatoes are tender and the sauce is to your satisfaction.

  5. Step 5

Once the pasta is ready, drain using the colander. Rinse off some of the starch with hot water. Return to boiler.

  6. Step 6

Combine the spaghetti sauce mixture and the pasta. Use the kitchen tongs to mix the ingredients thoroughly. Season with black pepper and salt, if desired.

  7. Step 7

Top with melted cheese and serve with a nice garden salad, fresh garlic bread or buttered rolls and your favorite beverage.

Tips & Warnings
  • When adding your pasta to the boiling water, you may either break the noodles or leave them whole.
  • Depending on your individual taste, you may combine the noodles and the spaghetti sauce mixture in the same pot or leave them separate and simply spoon the sauce over individual servings.
  • Use either regular salt, garlic salt or season salt, if desired.
  • Green onions may be substituted for white or yellow onions. They actually taste better in this recipe.
  • If serving this dish to children or individuals with health concerns, please cut down on salt and eliminate the red wine altogether.
