Peanut brittle is a great treat around the holidays. Make a batch of this tasty treat for your Christmas party, or put it in bags or tins and give it to friends and family members as gifts. This recipe makes 1 ½ pounds of brittle. Does this Spark an idea?

Things You'll Need

  • 2 cups sugar
  • 1 cup light corn syrup
  • 1 cup water
  • 2 cups raw Spanish peanuts
  • 1/2 teaspoon salt
  • 2 tablespoon butter
  • 2 teaspoon baking soda
  • 2 shallow baking pans

Instructions

      Heat and stir 2 cups of sugar, 1 cup light corn syrup and 1 cup water in a heavy 3-quart saucepan until the sugar dissolves. Add the salt.

      Cook over medium heat and add peanuts when the mixture hits 250 degrees.

      Cook the brittle to 290 degrees, stirring often. Remove from heat.

      Stir in 2 tablespoons butter and 2 teaspoons baking soda quickly. Beat to a froth for a few seconds.

      Pour at once onto two well-buttered shallow baking pans, spreading with spatula.

      Break apart when cooled.

Tips & Warnings

  • If desired, cool the brittle slightly and pull it with forks to stretch thin and then break up when cold.
