How to Make New Year’s Day Black Eyed Peas

Eat black eyed peas on New Year’s Day for good luck all year long. Some say just one will do; others insist you need to eat 365 black eyed peas to ensure good luck for every day of the year.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 2 cups dried black eyed peas
  • 5 cups water
  • 1 cup vegetable broth
  • 1 cup peeled, crushed tomatoes
  • 1/2 to 1 tsp. cayenne pepper
  • 2 tsps. basil
  • 1 tsp. all-purpose herb seasoning
  • 2 tbsps. canola or extra light virgin olive oil
  • 2 cloves minced garlic
  • 1/2 cup diced onion
  • 1 cup diced celery
  • 1 cup diced mushrooms
  • Salt

Step1
Combine black eyed peas and water in pan. Bring to boil then cover and simmer on medium-low for 30 minutes, or until peas are tender, but not soft.
Step2
Drain black eyed peas. Add vegetable broth, crushed tomatoes, cayenne pepper, basil and herb seasoning. Simmer on medium-low.
Step3
Saute in vegetable oil the garlic, onion, celery and mushrooms until onion is transparent.
Step4
Add sauted mixture to black eyed peas and mix well. Salt to taste.
Step5
Simmer on medium-low another 15 minutes and serve.

Tips & Warnings

  • Makes 6 to 8 servings of New Year’s Day black eyed peas.
  • You may substitute dried black eyed peas with 2 16-oz cans black eyed peas.
  • Adjust the cayenne pepper according to taste.
