How to Make Orange Baked Squash

Baked winter squash has to be one of the earthiest, most satisfying winter meals that exist. This combination of squash with orange is a surprising, zesty twist.

Instructions

Things You'll Need:

  • 1 shallow baking dish
  • 1 butternut squash or 2 small acorn squash
  • 1 tbsp. extra virgin olive oil
  • 1 orange
  • 1/2 C fresh Italian parsley
  • 1 garlic clove
  • Salt and pepper
  1. Step 1

    Preheat the oven to 400 degrees.

  2. Step 2

    Halve the squash lengthwise. Cut off the stems and scoop out seeds. If you are using a butternut squash, cut the halves crosswise and cut those pieces into wedges. If you are using acorn squash, cut the halves into 1-inch pieces.

  3. Step 3

    Lay the pieces of squash skin down in the baking dish. Drizzle with olive oil. Add salt and pepper.

  4. Step 4

    Chop the parsley into small pieces.

  5. Step 5

    Using a pairing knife, cut a small strip of the skin for the orange zest. Chop it into small pieces.

  6. Step 6

    Chop the garlic into small pieces.

  7. Step 7

    Sprinkle the orange, parsley, and garlic over the squash. Cover with foil and cook until the squash is moist and soft, about 1 hour.
