How to make creamy smashed potatoes

You don't need a holiday to have great potatoes! This recipe is the key to a potato lover's heart--it is creamy, delicious and has a great consistency. Try it, you'll love it.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 10 Red skin potatoes
  • 1/2 c. light sour cream
  • 1/2 c. butter
  • 1/4 c. milk
  • garlic salt
  • pepper

Step1
Boil a big pot of water with a pinch of salt in it. Then, wash the potatoes and only skin them partially. The skins have vitamins! Cut into quarters.
Step2
After the water is boiling and your potatoes are clean, place the potatoes in the water and let them cook for about 20 minutes. Check to see if the potatoes are done by taking one out and digging into it. It should be very soft and steaming like mad.
Step3
Drain the water out of the pot. Add the butter and milk to the potatoes and mash the potatoes into a consistency of your liking. (Some people like their potatoes chunkier than others! :))
Step4
Next, add some garlic salt, pepper and sour cream. Beat the potatoes until all the ingredients are mixed well. Cover to keep warm until serving. You can adjust the seasonings to your liking.

Tips & Warnings

  • Add a little bit of grated cheese to the potatoes to give them an extra kick!
  • These potatoes store very well, so you can put them in tupperware in the fridge for up to 5-6 days.
