Things You’ll Need:
- medium skillet
- 2 tablespoons butter (divided)
- 8 ounces beef tenderloin, cut into serving-sized pieces
- salt and pepper to taste
- 1 large shallot, minced
- 1 large clove garlic, minced
- 1 medium portabella mushroom, large dice
- 2 tablespoons Cognac or brandy or whiskey
- 1 cup heavy whipping cream
- ¼ cup crumbled blue cheese
Step1
To begin cooking your beef tenderloin with bleu cheese, heat 1 tablespoon butter in medium skillet over medium-high heat.

Season beef with salt and pepper.
Step3
Cook beef for 1 to 2 minutes per side until browned.
Step4
Remove from skillet and set aside.
Step5
Add remaining tablespoon butter, mushroom, shallot and garlic; cook for 2 to 3 minutes.
Step6
Deglaze pan with Cognac. Stir in cream and cook until reduced and thickened, about 10 to 15 minutes.
Step7
Return beef to skillet and cook for 2 to 3 minutes or until heated through.
Step8
Remove from heat. Stir in cheese.
Step9
Taste and adjust seasonings. Serve immediately.
