Things You'll Need:
- 2 lbs. fresh spinach
- Colander
- 3 bunches spring onions, sliced
- 4 tbsp. butter
- 6 eggs
- 1 lb. feta cheese, crumbled
- 1/4 lb. butter, melted
- 1 tbsp. dry mint
- Salt & pepper to taste
- 1/2 lb. butter for filo
- Pastry brush
- 15 x 11 x 2 baking dish
- 20 sheets filo pastry

Step 1
Run the spinach under cold water. Make sure you wash it thoroughly.

Chop the spinach into fine pieces, then let it drain in a colander. The draining process should take two to three hours.

Once the spinach is completely drained, slice the onions into small pieces and saute the onion in a small skillet with 4 tbs melted butter.

Place the eggs in a bowl and beat them with a whisk. Add the feta cheese, melted butter and mint. Mix together well, then blend in the sauteed onions, salt and pepper.

Place the package of filo dough close to the 15 x 11 x 2 baking dish and open the package of dough.

Place the ½ pound of butter in a glass bowl. Melt the butter in the microwave until it is completely liquid.

Line the baking dish with a sheet of filo. Do not fold down the edges.

Brush the filo with melted butter. Add another layer of filo and brush with butter. Continue layering buttered filo until you have used 10 sheets of dough.

Spread the spinach filling over the filo in the baking dish in an even layer. Add another layer of filo on top of the filling and brush the layer with melted butter. Continue adding layers of buttered filo until you have used up the rest of the dough.

Roll the edges and tuck them inside the pan. Brush edges with melted butter.

Using a sharp knife, score the top layers of the spanakopita into squares.

Bake the spanakopita in an oven at 350 degrees for 55-60 minutes. Cool for 15 minutes before cutting and serving.
