How to Make a Watergate Cake

Things You'll Need:

  • 1 (18.25 oz.) packaged white cake mix
  • 3/4 cup vegetable oil
  • 1 cup lemon-lime flavored soda
  • 3 eggs
  • 2 (3 0z.) packages of instant pistachio pudding mix
  • 1 eight ounce container of ready made whipped topping or 2 (1.3 0z) envelopes of dream whip
  • 1 and 1/2 cups of milk only if using dream whip
  • Medium to large size bowl
  • Wooden spoon
  • Electric mixer
  • Shortening or non stick cooking spray to grease cake pan
  • Cake pan 13 x 9
  • Oven
  • Refrigerator
  • Red hots, Christmas sprinkles or sugar, cake jell, coconut or chopped pistachio nuts all optional.

    Watergate Cake

  1. Step 1

    Beat the cake mix with oil, soda , eggs and the first package of pudding until smooth. Pour batter into greased 9 x 13 inch cake pan

  2. Step 2

    Place cake pan into oven and set temperature for 325 degrees Fahrenheit or 165 degrees centigrade. Bake cake for 45 minutes or until it tests done.

  3. Step 3

    If using dream whip method add milk and other package of pudding and beat until stiff. Omit this step if using ready made whipped topping.

  4. Step 4

    If using the ready made whip topping just stir in the last package of instant pudding and mix well. Pour over cooled cake and refrigerate. Yields about 18 servings. If making for a weight conscious crowd or diabetic using only half of the second pudding package into the ready made whipped topping or dream whip makes a lighter topping. Use skim milk to make the dream whip and this helps too. Sugar free lemon-lime flavored soda and sugar-free pudding allows some diabetics to enjoy a piece as well.

Tips & Warnings
  • For the holidays, I use decorations on top of the ready whipped and pudding topping such as red hots inside of a tree or star outlined by cake jell.
  • Some prefer to add toasted coconut or chopped pistachio nuts on top and this can be done all year. It is fine to serve without any extra toppings anytime.
  • If serving to young children do not use nuts and use your best judgement about red hots. I just use red Christmas decorating sugar instead when making for children.
