    • 3 pints of chicken broth
    • 1 teaspoon of minced onion
    • 2 tablespoons of butter
    • 1 1/2 cups of diced chicken
    • 1 cup of diced tomatoes
    • 2 cups of cut okra
    • 1 1/2 cups of rice

        Melt butter in large soup pot.

        Add minced onion to the melted butter and let it lightly simmer.

        Add chicken broth, tomatoes and okra to the pot.

        Let the mixture simmer for 30 minutes.

        Season your diced chicken with salt and pepper. Add it to the soup. Let it simmer for 30-40 minutes, or until chicken is done.

        Cook your rice.

        Place a heaping tablespoon or two of the rice in the bottom of a soup bowl. Pour a couple of ladles of your soup on top of the rice. Enjoy!
