Whether you raise chickens, have been given a bounty of eggs or just came across a good price at the grocery store, it's nice to be able to set aside extra eggs to use later. Whole eggs can be kept in the freezer up to six months. When you're ready to use them, thaw the eggs overnight in the refrigerator. Make sure the egg is thoroughly cooked before eating.   • Muffin tin
  • Mixer
  • Zip-close bags

Instructions

      Grease the muffin tin lightly.

      Crack the eggs and beat thoroughly with the mixer.

      Pour the eggs into the muffin tin, filling each section 1/4 inch from the top to allow for expansion. Each circle of a standard tin holds about two eggs. Place in the freezer.

      Remove the eggs from the tin once they are frozen. You may have to run a butter knife around the edges. Store the eggs in a zip-close bag in the freezer. Note the date on the bag.

Tips & Warnings

  • Frozen eggs do not have the same consistency as fresh eggs. They will appear slightly chalky or muddy looking and will not spread out readily. They are still fine to use, though you may prefer to use them for baking.

    This is great information! I didn't know eggs could be frozen. The price of eggs in our region has skyrocketed lately. Next time they drop, I will be buying 5-10 dozen and freezing them! Thanks! I wonder.... Would ice cube trays work as well and might they hold one egg? Would be handier for recipes that use an odd number of eggs.
